Me llamo Xosé Lois Sebio y soy enólogo- trabajo en Coto de Gomariz desde hace más de veinte años, pero desde 2010 lo compagino con otro proyecto personal: Viños de encostas. Busco vinos muy directos, de personalidad única y elaboraciones arriesgadas de zonas con identidad muy acusada. Zonas muchas veces olvidadas o poco habituales, con elaboraciones diferentes. Tradicionales unas e innovadoras otras, pero todas tratan de sacar lo mejor de unas uvas de alta calidad. Pero que por su bajo rendimiento y altos costes de cultivo hacen difícil su elaboración como un vino más comercial. El método de cultivo es unas veces ecológico ó biodinámico y otras se trabaja en convencional, dependiendo de la localización de la finca, variedad y su orografía. El objetivo, obtener uvas que expresen al máximo la identidad de la zona de donde provienen. Siempre con el respeto a la personalidad de suelo y a la variedad. Que sean las uvas las que marquen la línea de identidad y pureza del vino y no nosotros los que tratemos de dirigirlos.

Todos los vinos se elaboran con la mínima intervención y sin productos ajenos al vino en la bodega Coto de Gomariz, donde llevo las uvas de cada finca de algún amigo en diferentes zonas del Noroeste: Rías Baixas , Bierzo, Valdeorras y otros son de Gomariz, donde tengo pequeñas parcelas propias que estoy restaurando poco a poco. La línea de trabajo de viños de encostas es una línea de vinos muy auténtica. Alejados de convencionalismos y modas, con la intención única de expresar terruño, zona, vinos con alma y personalidad. Son vinos de elaboraciones muy exclusivas, pocas botellas por proceder de viñedos muy pequeños, de cepas viejas y con viticultura extrema. Vinos de colección, para los amantes de lo auténtico y diferente. Vinos sin maquillaje ni artificios, solo viños de encostas en estado puro. Cada año se elaboran varios proyectos, pero no todos salen a la calle, solo los que merecen llevar el nombre de viños de encostas. Unas veces esos proyectos son en solitario y otras acompañados de viticultores excepcionales, con fincas y uvas singulares. Estos proyectos en común unas veces son para la elaboración de un vino y otras para un proyecto común. Dependiendo de las añadas saldrán unos vinos u otros. La imagen de cada vino es una imagen moderna y diferente, basada en etiquetas que son ilustraciones. No dejarán indiferente al que las vea. La pretensión es que resalten y llamen la atención de una forma original y con personalidad. Las etiquetas son ideadas por mí y transmitido el concepto al diseñador, expone lo que debe ser viños de encostas. Los nombres hacen referencia a la elaboración, a la finca o a situaciones de la propia vida. My name is Xosé Lois Sebio and I am an oenologist - I have been working in Coto de Gomariz for more than twenty years, but since 2010 I have been combining it with another personal project: Viños de encostas. I am looking for very direct wines, with a unique personality and risky elaborations from areas with a very strong identity. Often forgotten or unusual areas, with different elaborations. Some are traditional and others innovative, but all of them try to get the best out of high quality grapes. But due to their low yield and high cultivation costs, they are difficult to produce as a more commercial wine. The method of cultivation is sometimes organic or biodynamic and others are worked in conventional, depending on the location of the farm, variety and its orography. The objective is to obtain grapes that express the identity of the area where they come from. Always respecting the personality of the soil and the variety. Let the grapes be the ones that mark the line of identity and purity of the wine and not us who try to direct them.

All the wines are elaborated with the minimum intervention and without products foreign to the wine in the winery Coto de Gomariz, where I take the grapes of each property of some friend in different zones from the Northwest: Rías Baixas , Bierzo, Valdeorras and others are from Gomariz, where I have small plots of my own that I am restoring little by little. The line of work of the vineyards of encostas is a very authentic line of wines. Far from conventionalisms and fashions, with the unique intention of expressing terroir, area, wines with soul and personality. They are wines of very exclusive elaboration, few bottles because they come from very small vineyards, from old vines and with extreme viticulture. Collector's wines, for lovers of the authentic and different. Wines without makeup or artifices, only pure vines of coasts. Every year several projects are elaborated, but not all of them go out to the streets, only those that deserve to be named after the vineyards of encostas. Sometimes these projects are carried out alone and other times they are accompanied by exceptional winegrowers, with unique estates and grapes. These common projects are sometimes for the elaboration of a wine and other times for a common project. Depending on the vintages, some wines will come out or others. The image of each wine is a modern and different image, based on labels that are illustrations. They will not leave the person who sees them indifferent. The aim is for them to stand out and attract attention in an original way and with personality. The labels are devised by me and transmitted the concept to the designer, exposing what should be vineyards of coasts. The names refer to the elaboration, to the estate or to situations of life itself.
